Ingredients:

– 4 medium sweet potatoes

– 1 cup Brussels sprouts, trimmed and halved

– 2 tablespoons olive oil

– 1 cup butternut squash, diced fresh or frozen

– 1 teaspoon dried thyme or 1 tablespoon fresh thyme

– 1/2 cup dried cranberries

– Extra crumbled goat cheese for garnish


Instructions:

1. Preheat your oven to 400F 200C and line a baking sheet with parchment paper for an easy cleanup.

2. Get those sweet potatoes ready! Wash them well, then pierce each one multiple times with a fork. Rub the skins with olive oil, salt, and pepper. Place them on the prepared baking sheet and roast for 45-50 minutes or until theyre tender.

3. While the sweet potatoes roast away, prepare the filling. In a bowl, toss the Brussels sprouts and butternut squash with olive oil, salt, pepper, and thyme. Spread them out in a single layer on another baking sheet and roast for 20-25 minutes, stirring halfway through until theyre caramelized and tender.

4. Once the sweet potatoes are done, take them out of the oven and let them cool for a bit. Slice each sweet potato in half lengthwise to create “”boats.”” Carefully scoop out some of the flesh, leaving a bit around the edges to keep them sturdy.

5. In a mixing bowl, combine the roasted Brussels sprouts, butternut squash, the scooped sweet potato flesh, dried cranberries, and crumbled goat cheese. Stir everything together until well mixed.

6. Its time to stuff those boats! Fill each sweet potato half generously with the vegetable mixture. Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, until the cheese is slightly melted and everything is heated through.

7. Finish with a flourish! Top with extra crumbled goat cheese and a sprinkle of freshly chopped parsley if youre feeling fancy. Serve warm and enjoy every bite!
