Sweet Potato Rounds with Goat Cheese & Cranberries 凜燎
Ingredients:
2 large sweet potatoes, sliced into -inch rounds 凜
2 tablespoons olive oil
Salt and pepper to taste 蓼
4 oz goat cheese, softened 燎
cup dried cranberries
2 tablespoons honey optional
Fresh thyme leaves
Balsamic glaze for drizzling 磻
Directions:
1 Prep and Roast the Sweet Potatoes:
Preheat oven to 425F 220C.
Arrange sweet potato rounds on a baking sheet and brush both sides with olive oil. Season with salt and pepper.
Roast for 20-25 minutes, flipping halfway, until golden and tender.
2 Add the Toppings:
Remove from the oven. While still warm, spread goat cheese on each round and top with a few dried cranberries.
3 Drizzle and Garnish:
Drizzle with honey if using and balsamic glaze. Sprinkle fresh thyme leaves over the top.
