Ingredients:
– 1 cup whole milk
– 1 cup sweetened shredded coconut
– 1 cup chopped pecans
– 2 cups granulated sugar
– 1/2 cup vegetable oil
– 1 cup boiling water

– 1 tsp salt
– 3/4 cup unsweetened cocoa powder
– 2 large eggs
– 12 tsp baking powder
– 1 1/2 tsp baking soda
– 2 tsp vanilla extract
– 1 cup evaporated milk
– 3 large egg yolks
– 1/2 cup unsalted butter
– 1 tsp vanilla extract for frosting
Instructions:
1. Preheat your oven to 350F 175C and prepare three 9-inch round baking pans by greasing and flouring them.
2. In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
3. Pour in the whole milk, vegetable oil, eggs, and 2 teaspoons of vanilla extract. Mix on medium speed until everything is well combined.
4. Reduce the mixer speed and slowly add the boiling water to the batter. Beat on high speed for one minute to incorporate air into the mixture.
5. Evenly distribute the batter into the prepared baking pans. Bake for 30-35 minutes, or until a toothpick inserted in the center of each cake layer comes out clean. Let the cakes cool in the pans for about 10 minutes, then remove from pans and cool completely on a wire rack.
6. For the delicious frosting, combine evaporated milk, sugar, egg yolks, butter, and the remaining teaspoon of vanilla in a saucepan. Cook over medium heat, stirring constantly for about 12 minutes until the mixture thickens.
7. Remove the saucepan from the heat and fold in the shredded coconut and chopped pecans. Allow it to cool until it reaches a spreadable consistency.
8. Frost your cooled cake layers with the coconut-pecan frosting, using it between layers, on top, and around the sides of the cake.
