Would you Eat Heavenly Banana Cream Cheese Cake?

Ingredients:

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1/2 cup brown sugar

– 3 large eggs

– 1 teaspoon vanilla extract

– 1 cup chopped walnuts

– 1/2 cup buttermilk

– 3 ripe bananas, mashed

– 2 cups all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon salt

For the Cream Cheese Frosting:

– 8 oz cream cheese, softened

– 1/2 cup unsalted butter, softened

– 1 cup powdered sugar


– 1 teaspoon vanilla extract

Instructions:

1. Preheat your oven to 350F 175C. Grease and flour three 9-inch round cake pans.

2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.

3. Add the eggs one at a time, making sure to mix well after each addition. Then stir in the vanilla extract and the mashed bananas until fully combined.

4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

5. Gradually add the dry mixture to the banana mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until combined.

6. Fold in the chopped walnuts to add an extra crunch!

7. Divide the batter evenly among the prepared cake pans and bake for 25-30 minutes or until a toothpick comes out clean when inserted in the center. Let the cakes cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.

8. For the frosting, beat the softened cream cheese and butter together in a bowl until smooth. Gradually add in the powdered sugar one cup at a time, making sure to mix well after each addition. Finally, stir in the vanilla extract.

9. To assemble, place one cake layer on a serving plate and spread a generous layer of frosting on top. Repeat this with the remaining layers and cover the top and sides of the cake with frosting. For a beautiful finish, decorate with banana slices and walnuts if desired.
