Ingredients:
– 1 1/2 cups zucchini, shredded do not squeeze
– 1/4 cup butter, melted and cooled
– 2 large eggs
– 1 1/2 cups cheddar cheese, shredded
– 2 cups all-purpose flour
– 1/4 cup green onion, sliced optional
– 1 1/2 teaspoons baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 3/4 cup sour cream
Instructions:
1. Start by preheating your oven to 350F 180C. Grease a 9 x 5 inch loaf pan to prevent sticking.
2. In a large bowl, combine the shredded zucchini, green onions if using, eggs, sour cream, and melted butter. Mix everything well and then fold in the cheddar cheese.
3. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well blended.
4. Gradually mix the dry ingredients into the wet mixture until fully incorporated.
5. Pour the batter evenly into the prepared loaf pan.
6. Bake in the preheated oven for about 50-70 minutes, or until a toothpick inserted in the center comes out clean.
7. Once baked, let the loaf cool for a few minutes before removing it from the pan. Slice it up and enjoy with a touch of melted butter!
