Warm and Fluffy Apple Cider Donuts Coated in Sweet Cinnamon Sugar
Ingredients:
2 cups apple cider
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
Cinnamon Sugar Coating:
1 cup granulated sugar
1 tablespoon ground cinnamon
4 tablespoons unsalted butter, melted
Directions:
Reduce the Apple Cider:
In a small saucepan, simmer the apple cider over medium heat until reduced to about 1/2 cup takes 15-20 minutes. Let it cool completely.
Prepare the Donut Batter:
Preheat oven to 350F 175C and grease a donut pan.
In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in eggs one at a time, then stir in vanilla extract and cooled apple cider reduction.
Add the dry ingredients to the wet ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Bake the Donuts:
Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
Bake for 12-15 minutes or until a toothpick inserted comes out clean.
Allow the donuts to cool slightly before removing from the pan.
Cinnamon Sugar Coating:
Mix sugar and cinnamon together in a shallow bowl.
Brush each warm donut with melted butter, then roll in the cinnamon sugar mixture until fully coated.

Enjoy warm with a hot cup of coffee or a glass of apple cider for the ultimate fall treat!
