Skillet Spinach Lasagna
Ingredients:
9 lasagna noodles, broken into pieces
1 lb ricotta cheese
3 cups fresh spinach, chopped
1 can 15 oz tomato sauce
1 jar 24 oz marinara sauce
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon dried basil
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions:
Cook lasagna noodles according to package instructions, drain, and set aside.
In a skillet, combine marinara sauce, tomato sauce, basil, garlic powder, salt, and pepper. Heat over medium.
Stir in ricotta cheese and spinach. Once spinach has wilted, stir in cooked noodles and mozzarella cheese. Cook for about 3 minutes until heated through.
Sprinkle Parmesan cheese over the top and cover to melt the cheese, about 2 minutes.
Remove from heat and serve immediately.
