Mexican Lasagna – No Lasagna Noodles! 燎

Ingredients:

1 lb ground beef or turkey

1 packet taco seasoning mix

1 can 15 oz black beans, drained and rinsed

1 cup corn kernels

1 jar 16 oz salsa

1 cup enchilada sauce

8 small flour or corn tortillas

2 cups shredded Mexican blend cheese


Optional toppings: sour cream, sliced jalapeños, chopped cilantro, diced tomatoes

Instructions:

Preheat oven to 375F 190C.

In a skillet, cook ground meat over medium heat until browned. Add taco seasoning and cook according to packet instructions. Stir in black beans, corn, and salsa.

In a 9×13-inch baking dish, spread a thin layer of enchilada sauce. Layer tortillas to cover the bottom.

Add a layer of the meat mixture, sprinkle with cheese, and top with another layer of tortillas. Repeat layers, ending with cheese on top.

Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.

Let it cool for 5 minutes. Add your favorite toppings and serve!
