Seared Scallops in Tomato Sauce Recipe
Ingredients:
12 fresh scallops
2 tbsp olive oil 㮝
1/2 tsp salt 蓼
1/4 tsp black pepper
1 cup diced tomatoes
1/4 cup chicken or vegetable broth
1 clove garlic, minced 龍
1/4 cup chopped green onions
Instructions:
1. Pat scallops dry with a paper towel. Sprinkle with salt and black pepper. 蓼
2. Heat olive oil in a skillet over medium-high heat. Add scallops and sear for 2 minutes on each side until golden brown. Remove and set aside. 籠
3. In the same skillet, add garlic and cook for 1 minute. 龍
4. Add diced tomatoes and broth. Let simmer for 5 minutes until slightly reduced.
5. Return scallops to the skillet and cook for another 2 minutes, spooning the sauce over them.
6. Garnish with green onions and serve warm.
