Rotisserie Chicken
Ingredients:
1 whole chicken 3-4 lbs
2 tbsp olive oil
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
1 lemon, quartered
4 garlic cloves, smashed
1/2 cup chicken broth optional, for roasting pan
Instructions:
Preheat the oven to 375F 190C.
Pat the chicken dry with paper towels. Rub the chicken inside and out with olive oil.
In a small bowl, mix paprika, garlic powder, onion powder, thyme, rosemary, salt, and pepper. Rub this seasoning mixture generously over the chicken.
Stuff the chicken cavity with the lemon quarters and smashed garlic.
If using, pour chicken broth into the bottom of a roasting pan. Place the chicken on a rack or directly in the pan.
Roast the chicken for about 1-1.5 hours or until the internal temperature reaches 165F 74C, and the skin is golden and crispy.
Let the chicken rest for 10-15 minutes before carving.
