Quick and Easy Chicken Noodle Soup
Ingredients:
2 tbsp olive oil
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
6 cups chicken broth
2 cups cooked chicken, shredded
2 cups egg noodles or your preferred pasta
1/2 tsp dried thyme
1/2 tsp dried parsley
Salt and pepper to taste
Fresh parsley for garnish optional
Instructions:
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5-7 minutes until softened.
Add garlic and cook for another 1 minute until fragrant.
Pour in chicken broth and bring to a simmer.
Add the shredded chicken, egg noodles, thyme, parsley, salt, and pepper. Stir and cook for 10-12 minutes, or until the noodles are tender.
Taste and adjust seasoning as needed.
Serve hot, garnished with fresh parsley if desired.
