Chicken Parmesan
Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
2 cups breadcrumbs preferably Italian-style
1 cup grated Parmesan cheese
2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
2 tbsp olive oil
Salt and pepper to taste
Fresh basil for garnish
Instructions:
Preheat oven to 400F 200C.
Season chicken breasts with salt and pepper. Dredge each piece in flour, dip in beaten eggs, then coat with breadcrumbs and Parmesan cheese.
In a large skillet, heat olive oil over medium-high heat. Cook chicken breasts for 4-5 minutes on each side, until golden brown and crispy.
Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the browned chicken breasts on top.
Pour the remaining marinara sauce over the chicken and top with shredded mozzarella.
Bake for 15-20 minutes, or until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165F 74C.
Garnish with fresh basil and serve with pasta, garlic bread, or a salad.
