Ingredients:

For the cookies:

2 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp salt

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup packed brown sugar

1 large egg

1 tsp vanilla extract

1 cup pumpkin puree

1/2 cup chopped pecans or walnuts optional

For the cream cheese frosting:

8 oz cream cheese, softened


1/4 cup unsalted butter, softened

1 1/2 cups powdered sugar

1 tsp vanilla extract

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper.

In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.

In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

Add the egg, vanilla extract, and pumpkin puree, mixing until smooth.

Gradually add the dry ingredients and stir until combined. If desired, fold in chopped pecans or walnuts.

Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing about 2 inches apart.

Bake for 10-12 minutes, or until the cookies are set and lightly golden around the edges.

Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

For the frosting:

Beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Frost cooled cookies generously with the cream cheese frosting.
