Pineapple Upside Down Delight Cookies

Ingredients:

1 cup butter room temperature

1 cups granulated sugar

2 eggs

2 tsp vanilla extract

cup sour cream

3 cups all-purpose flour

1 tsp baking powder

1 tsp cornstarch

tsp salt

13 canned pineapple slices


13 maraschino cherries

cup melted butter

1 cup packed light brown sugar

Directions:

Preheat oven to 350F and grease a mini round cake pan.

Prepare cookie dough by mixing butter, sugar, eggs, vanilla, sour cream, and dry ingredients.

Arrange brown sugar, pineapple, and cherries in the pan.

Scoop dough on top and bake for 25 minutes.

Cool for 10 minutes, then invert.
