5-Ingredient Peppermint Patties
Ingredients:
3 cups shredded unsweetened coconut
2 tablespoons maple syrup
1/2 to 3/4 teaspoon peppermint extract or food-grade peppermint oil
2 teaspoons coconut oil divided
1 cup vegan dark chocolate chopped
Directions:
Blend coconut until it forms a dough-like texture.
Mix in maple syrup, peppermint extract, and 1 tsp melted coconut oil.
Shape into discs and freeze for 10 minutes.
Melt dark chocolate with remaining coconut oil and dip patties.
Let set in the fridge.
