Pignoli Cookies
Ingredients:
1 1/2 cups almond flour
1 cup powdered sugar
2 large egg whites
1 tsp vanilla extract
1/4 tsp salt
1/2 cup pine nuts pignoli
1/4 cup semisweet chocolate chips optional
Instructions:
Preheat oven to 350F 175C. Line baking sheets with parchment paper.
In a large bowl, combine almond flour, powdered sugar, egg whites, vanilla extract, and salt. Stir until smooth.
Using your hands, shape dough into 1-inch balls and place them on the prepared baking sheets.
Press pine nuts into the tops of each cookie.
Bake for 12-15 minutes, or until cookies are lightly golden.
Optional: melt chocolate chips and drizzle over cooled cookies for added sweetness.
