Gluten-Free Sugar Cookies
Ingredients:
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
1 tsp vanilla extract
2 cups gluten-free all-purpose flour blend
1/2 tsp baking soda
1/4 tsp salt
1/4 cup granulated sugar for rolling
Instructions:
Preheat oven to 350F 175C. Line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy.
Beat in egg and vanilla extract until well combined.
In a separate bowl, whisk together gluten-free flour, baking soda, and salt.
Gradually add dry ingredients to the wet mixture, mixing until smooth.
Roll dough into 1-inch balls, then roll each ball in granulated sugar to coat.
Place dough balls on prepared baking sheets, spacing them about 2 inches apart.
Bake for 8-10 minutes or until edges are lightly golden and cookies have spread.
Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
