Molasses Cookies
Ingredients:
2 1/4 cups all-purpose flour
2 tsp ground ginger
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
3/4 cup unsalted butter, softened
1 cup granulated sugar, plus extra for rolling
1 large egg
1/4 cup molasses
1 tsp vanilla extract
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper.
In a bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
In a large bowl, beat together butter and 1 cup of sugar until light and fluffy.
Add the egg, molasses, and vanilla extract, mixing until well combined.
Gradually add the dry ingredients and mix until a dough forms.
Roll dough into 1-inch balls and coat each one in the extra granulated sugar.
Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 8-10 minutes, or until the edges are firm and the tops crack slightly.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
