Best Soft Christmas Cookies
Ingredients:
2 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup powdered sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp almond extract optional
Sprinkles or colored sugar optional
Instructions:
Preheat the oven to 350F 175C and line baking sheets with parchment paper.
In a bowl, whisk together flour, baking soda, and salt. Set aside.
In a large bowl, cream together butter, granulated sugar, and powdered sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla extract and almond extract if using.
Gradually add the dry ingredients to the butter mixture and mix until combined.
Roll the dough into 1-inch balls and place them on the prepared baking sheets. Flatten slightly with the back of a spoon.
Top with sprinkles or colored sugar, if desired.
Bake for 8-10 minutes, or until the edges are light golden brown.
Let the cookies cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
