Mexican Breakfast Tacos
Ingredients:
6 large eggs
1 tbsp olive oil
1/2 onion, diced
1/2 bell pepper, diced
1/2 tsp ground cumin
1/4 tsp chili powder
1/4 tsp paprika
Salt and pepper to taste
8 small tortillas
1/2 cup shredded cheese cheddar or Mexican blend
1/4 cup chopped cilantro
1/4 cup salsa
1/2 avocado, sliced
Lime wedges for serving
Instructions:
In a skillet, heat olive oil over medium heat. Add diced onion and bell pepper, cooking until softened about 4-5 minutes.
Beat eggs in a bowl and season with cumin, chili powder, paprika, salt, and pepper. Pour the eggs into the skillet and cook, stirring occasionally, until scrambled and cooked through about 3-4 minutes.
Warm the tortillas in a separate pan or microwave.
Assemble tacos by filling each tortilla with the scrambled eggs, vegetables, shredded cheese, salsa, avocado slices, and chopped cilantro.
Serve with lime wedges for an extra burst of freshness.
