Lime Chicken Soft Tacos
Ingredients:
1.5 lbs boneless, skinless chicken breasts
2 tbsp olive oil
Juice of 2 limes
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp cumin
1/4 tsp paprika
Salt and pepper to taste
8 soft flour tortillas
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1/2 cup sour cream
Lime wedges for serving
Instructions:
In a bowl, combine olive oil, lime juice, chili powder, garlic powder, cumin, paprika, salt, and pepper to create the marinade.
Marinate the chicken in the mixture for at least 30 minutes to allow the flavors to develop.
Preheat a skillet or grill pan over medium-high heat. Cook the chicken for 6-7 minutes per side until fully cooked and juices run clear.
Let the chicken rest for 5 minutes, then slice it thinly.
Warm the tortillas in a separate pan or microwave.
Assemble tacos by adding the lime chicken, shredded lettuce, diced tomatoes, and cilantro to each tortilla.
Top with a dollop of sour cream and serve with lime wedges.
