Chipotle Shrimp Tacos
Ingredients:
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tsp chipotle chili powder
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp smoked paprika
Salt and pepper to taste
8 small tortillas
1/2 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1/4 cup diced red onion
1 lime, cut into wedges
1/4 cup sour cream optional for garnish
Instructions:
In a bowl, toss shrimp with olive oil, chipotle chili powder, garlic powder, cumin, smoked paprika, salt, and pepper.
Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side until they are pink and cooked through.
Warm the tortillas in a separate pan or microwave.
Assemble tacos by layering shrimp, shredded lettuce, diced tomatoes, cilantro, and red onion in each tortilla.
Top with sour cream optional and serve with lime wedges.
