Lucky New Years Black-Eyed Pea Stew

Ingredients:

2 cups dried black-eyed peas, soaked and drained

1 medium onion, chopped

2 cloves garlic, minced

1 large carrot, diced

2 celery stalks, chopped

1 14.5 oz can diced tomatoes

6 cups vegetable broth

1/2 tsp smoked paprika

1/4 tsp cumin


1 tsp thyme

1/2 tsp cayenne pepper optional

Salt and black pepper to taste

1 tbsp olive oil

Fresh parsley, chopped for garnish

Instructions:

1 In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Sauté until vegetables are softened.

2 Stir in the black-eyed peas, diced tomatoes, vegetable broth, smoked paprika, cumin, thyme, cayenne pepper, salt, and black pepper.

3 Bring to a boil, then lower heat and simmer for 1 to 1.5 hours, or until the peas are tender and the stew has thickened.

4 Garnish with fresh parsley and serve with cornbread for a lucky start to the New Year!
