Sweet Corn Cake
Ingredients:
1 cup cornmeal
1 cup whole kernel corn fresh, frozen, or canned
1/2 cup unsalted butter, softened
1/3 cup sugar
1/2 cup milk
1/4 cup corn flour masa harina
1 tsp baking powder
1/4 tsp salt
Instructions:
1 Preheat your oven to 350F 175C and grease an 8-inch square baking dish.
2 In a bowl, mix the softened butter, sugar, and salt until creamy.
3 Add the corn, milk, cornmeal, corn flour, and baking powder. Mix until well combined.
4 Pour the batter into the prepared baking dish and spread evenly.
5 Cover with aluminum foil and bake for 50-60 minutes, or until the edges are golden and the center is set.
6 Let cool for a few minutes before serving warm with a drizzle of honey or a dollop of butter.
