Roasted Grape Crostini with Fresh Herbs

Ingredients:

1 baguette, sliced into 1-inch pieces

1 1/2 cups red or green grapes, halved

2 tbsp olive oil, divided

1 tsp honey

Salt and pepper to taste

1/4 cup fresh goat cheese or ricotta

1 tbsp fresh thyme, chopped


1 tbsp fresh rosemary, chopped

1 tbsp fresh parsley, chopped

Instructions:

1 Preheat the oven to 375F 190C.

2 Spread the baguette slices on a baking sheet. Drizzle with 1 tbsp olive oil and toast in the oven for 7-10 minutes, until golden and crispy.

3 In a separate bowl, toss the grapes with 1 tbsp olive oil, honey, salt, and pepper. Spread on a baking sheet and roast for 12-15 minutes, until soft and caramelized.

4 Spread goat cheese or ricotta on each crostini. Top with roasted grapes and a drizzle of any pan juices.

5 Garnish with chopped fresh herbs and serve as a delightful appetizer or snack.
