Juicy Roasted Chicken

Ingredients:

1 whole chicken 4-5 lbs

2 tbsp olive oil

1 tbsp butter, softened

1 lemon, quartered

4 garlic cloves, smashed

2 sprigs fresh rosemary

2 sprigs fresh thyme

Salt and pepper to taste


Instructions:

Preheat oven to 425F 220C.

Pat the chicken dry with paper towels. Rub the chicken inside and out with olive oil and butter.

Stuff the chicken cavity with lemon wedges, garlic, rosemary, and thyme.

Season the chicken generously with salt and pepper.

Place the chicken breast-side up on a roasting rack in a roasting pan.

Roast for 1 to 1.5 hours, until the chicken reaches an internal temperature of 165F 74C and the skin is golden and crispy.

Let the chicken rest for 10-15 minutes before carving.

Roast it to perfection for juicy, tender meat with crispy skin!
