Chef Johns Nashville Hot Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup buttermilk
2 cups all-purpose flour
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
Salt and black pepper to taste
Oil for frying
For the Hot Sauce:
1/4 cup cayenne pepper
1 tbsp brown sugar
1 tsp paprika
1/2 tsp garlic powder
1/4 tsp ground black pepper
1/4 cup vegetable oil
2 tbsp hot sauce
1/2 tsp salt
Instructions:
In a bowl, mix buttermilk with a pinch of salt and pepper. Soak the chicken in the buttermilk for at least 1 hour.
In a separate bowl, mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Heat oil in a deep pan or fryer to 350F 175C. Coat the chicken with the seasoned flour mixture and fry until golden brown and crispy, about 5-7 minutes per side.
While the chicken is frying, prepare the hot sauce. Combine cayenne pepper, brown sugar, paprika, garlic powder, black pepper, oil, hot sauce, and salt in a small pan. Cook over low heat, stirring constantly, until warm and well combined.
Remove fried chicken from the oil and immediately dip it into the hot sauce mixture to coat thoroughly.
Serve the hot chicken on toasted bread with pickles or with a side of your choice.
