Instructions:

In a large bowl, combine buttermilk, hot sauce if using, and a pinch of salt and pepper. Submerge chicken pieces in the buttermilk mixture and refrigerate for at least 1 hour or overnight.

In another bowl, mix flour, garlic powder, onion powder, paprika, cayenne, salt, and black pepper.

Remove chicken from the buttermilk and coat thoroughly with the flour mixture, pressing to adhere.


Heat oil in a deep fryer or large skillet over medium-high heat to 350F 175C.

Fry the chicken in batches for 12-15 minutes or until golden brown and internal temperature reaches 165F 74C.

Drain on a paper towel-lined plate and serve hot.

Perfectly crunchy on the outside, juicy on the inside!
