Ingredients:

2 large yellow onions, thinly sliced3 tablespoons butter2 teaspoons sugar2 cups beef or chicken broth1 teaspoon dried thyme1/2 cup shredded Gruyère or Swiss cheese optional, for topping


Directions:

Make the meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic powder, onion powder, thyme, salt, and pepper. Mix until just combined. Shape into 1-inch meatballs and set aside.Cook the meatballs: Heat a large skillet over medium heat with a drizzle of olive oil. Cook the meatballs in batches, turning occasionally, until browned on all sides and cooked through about 810 minutes. Remove and set aside.Caramelize the onions: In the same skillet, melt the butter over medium-low heat. Add the onions and sugar. Cook, stirring occasionally, until the onions are golden and caramelized, about 2025 minutes.Make the sauce: Increase the heat to medium, add the broth and thyme to the onions, and scrape the bottom of the skillet to deglaze.
