Banana Cookies

Ingredients:

1 1/2 cups mashed ripe bananas about 3 bananas

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 cup rolled oats optional

1/2 cup chocolate chips or nuts optional

Instructions:


Preheat oven to 350F 175C. Line baking sheets with parchment paper.

In a large bowl, cream together butter, sugar, and vanilla extract until smooth.

Stir in mashed bananas until fully combined.

In a separate bowl, whisk together flour, baking soda, and salt.

Gradually mix dry ingredients into the wet ingredients until a dough forms.

Stir in oats and chocolate chips or nuts optional.

Drop dough by rounded tablespoonfuls onto prepared baking sheets.

Bake for 10-12 minutes, or until cookies are golden brown on the edges.

Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
