Fried Cornbread – Dont Lose This Recipe!
Ingredients:
2/3 cup cornmeal
1/3 cup self-rising flour
1/3 cup low-fat buttermilk
1 large egg
Oil for frying about 3 tablespoons coconut oil or your choice
Instructions:
Mix the Batter:
In a bowl, combine the cornmeal, flour, buttermilk, and egg until well mixed; the batter should be moist.
Heat the Oil:
In a skillet, heat the oil over medium heat.
Cook the Cornbread:
Drop spoonfuls of the batter into the skillet and cook until golden brown on both sides, similar to pancakes.
Drain Excess Oil:
Remove the fried cornbread and place it on paper towels to absorb any excess oil.
Serve warm and enjoy these delicious hoecakes!
