Chicken Bacon Ranch Casserole

Ingredients:

2 cups cooked chicken, shredded

8 slices bacon, cooked and crumbled

1 package 16 oz rotini pasta

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

3 cups heavy cream

1 packet ranch dressing mix

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

Salt and pepper to taste

2 tablespoons fresh parsley, chopped for garnish

Directions:

Preheat the Oven:

Preheat your oven to 375F 190C.


Cook the Pasta:

Prepare the pasta according to the package instructions; drain and set aside.

Sauté the Vegetables:

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 2-3 minutes.

Make the Sauce:

Pour in the heavy cream and ranch dressing mix, stirring well. Bring the mixture to a simmer and cook for 5 minutes until slightly thickened.

Combine Ingredients:

In a large mixing bowl, combine the cooked pasta, shredded chicken, crumbled bacon, the sauce from the skillet, and half of the shredded cheeses. Season with salt and pepper to taste.

Transfer to Baking Dish:

Pour the mixture into a greased baking dish. Top with the remaining shredded cheeses.

Bake:

Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve:

Garnish with chopped parsley before serving.
