Dump Chicken and Veggies
Ingredients:
4 boneless, skinless chicken breasts
1 can 14.5 oz diced tomatoes with juice
1 can 15 oz black beans drained and rinsed
1 cup frozen corn
1 packet taco seasoning or your favorite seasoning blend
1 bell pepper chopped
1 onion chopped
Salt and pepper to taste
Optional: shredded cheese for topping
Instructions:
Prep the Slow Cooker: Spray your slow cooker with cooking spray or use a liner for easy cleanup.
Layer Ingredients: Place the chicken breasts at the bottom. Top with diced tomatoes, black beans, corn, bell pepper, onion, and taco seasoning.
Season: Add salt and pepper to taste. You can mix everything a bit if you like, but its not necessary.
Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and shreds easily.
Serve: Shred the chicken in the pot, mix it with the other ingredients, and serve it in bowls. Top with cheese if desired.
