Rustic Beef Stew
Ingredients:
2 lbs beef chuck, cut into 1-inch cubes
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 carrots, sliced
3 potatoes, diced
2 cups beef broth
1 cup red wine optional; you can use more broth if you prefer
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
2 teaspoons dried thyme
2 bay leaves
Salt and pepper to taste
Fresh parsley for garnish, optional
Instructions:
Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.
Sauté the Vegetables: In the same pot, add the chopped onion and cook until translucent. Add the garlic and sauté for another minute.
Combine Ingredients: Return the browned beef to the pot. Add the carrots, potatoes, beef broth, red wine, tomato paste, Worcestershire sauce, thyme, bay leaves, salt, and pepper. Stir to combine.
Simmer: Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally and adjust the seasoning as needed.
Serve: Remove the bay leaves before serving. Garnish with fresh parsley if desired. Enjoy with crusty bread!
Tips:
You can add other vegetables like parsnips or mushrooms for extra flavor.
This stew can be made in advance and tastes even better the next day!
