1 cups graham cracker crumbs

Directions:
1 Prepare the Crust:
Preheat oven to 350F 175C. Grease a 9-inch springform pan.
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan.
Bake the crust for 10 minutes. Remove from the oven and let cool completely.
2 Chocolate Layer:
Heat the heavy cream until it just begins to simmer. Pour over the chocolate chips in a bowl, let sit for 2 minutes, then stir until smooth.
Spread the chocolate mixture over the cooled crust. Chill in the refrigerator for 30 minutes.
3 Cream Cheese Custard Filling:
In a large bowl, beat the cream cheese and sugar until smooth.
Add the eggs one at a time, beating after each addition. Mix in the heavy cream and vanilla extract until well combined.
Pour the cream cheese mixture over the chocolate layer in the crust.
Bake for 55-60 minutes, or until the center is set. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
4 Ganache Topping:
Heat the heavy cream until it simmers. Pour over the chocolate chips and let sit for 2 minutes. Stir until smooth.
Pour the ganache over the chilled cheesecake and spread evenly.
