Ingredients:

1 cup cold unsalted butter, cut into small cubes 杻

1 cup cake flour

1 cups all-purpose flour

1 teaspoon cornstarch

3 cups peanut butter chips 樂

Instructions:

1 Preheat Oven: Set the oven to 410F 210C. Line two baking sheets with silicone baking mats or parchment paper.

2 Cream Butter & Sugar: In a stand mixer, cream together the cold butter and sugar on high speed until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl to ensure everything is incorporated.

3 Add Dry Ingredients: Add the cocoa powder, cake flour, all-purpose flour, cornstarch, baking soda, and salt. Mix on low speed until just combined to avoid overmixing. Stir in the peanut butter chips by hand.

4 Shape Cookies: For each cookie, scoop out approximately 6 oz of dough. Form loose, rough dough balls without compacting them. This helps create the thick, soft texture.

5 Arrange on Baking Sheet: Place four cookies on each baking sheet, spaced about 2 inches apart.

6 Bake: Bake one sheet at a time on the middle rack for 8-10 minutes, or until the surface looks set but the center remains slightly underbaked.
