Crockpot Mississippi Chicken
Ingredients:
2 lbs boneless, skinless chicken breasts
1 packet ranch seasoning mix
1 packet au jus gravy mix
1/2 cup unsalted butter 1 stick, cut into slices
6-8 pepperoncini peppers
1/4 cup juice from the pepperoncini jar
Salt and pepper to taste
Directions:
Prepare the crockpot: Place the chicken breasts in the bottom of your slow cooker.
Add seasonings: Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the chicken.
Top with butter & peppers: Lay the butter slices over the chicken, then scatter the pepperoncini peppers on top. Pour in 1/4 cup of the pepperoncini juice.
Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shreds.
Shred & serve: Shred the chicken directly in the crockpot, mixing it with the juices and butter for extra flavor. Serve over mashed potatoes, rice, or on sandwich buns.
