Creamy Rice Pudding
Ingredients:
– 3/4 cup uncooked white rice
– 2 cups milk, divided
– 1/3 cup white sugar

– 1 egg, beaten
– 2/3 cup raisins optional
– 1 tablespoon butter
– 1/2 teaspoon vanilla extract
Directions:
1. Cook the Rice: In a medium saucepan, bring 1 1/2 cups of water to a boil. Stir in the rice and reduce heat to low. Cover and simmer for 20 minutes or until the rice is tender.
2. Make the Pudding Base: In another saucepan, combine 1 1/2 cups of the cooked rice, 1 1/2 cups of milk, sugar, and salt. Cook over medium heat, stirring frequently, until the mixture thickens, about 1520 minutes.
3. Add the Egg and Remaining Milk: Stir the beaten egg into the remaining 1/2 cup of milk. Gradually add this mixture to the rice pudding, stirring constantly. Continue to cook for 2 minutes to ensure the egg is fully incorporated and cooked.
4. Enhance the Flavor: Remove the saucepan from heat. Stir in the raisins if using, butter, and vanilla extract until everything is well mixed.
5. Serve Warm or Cold: Let the pudding cool slightly, then serve. You can enjoy this creamy rice pudding warm, or refrigerate it for a chilled treat later.
