Strawberry Cake from Scratch A Fresh and Fruity Delight!

Ingredients:
– 1 cup unsalted butter, softened
– 1 cups sugar
– 1 package 3 oz strawberry-flavored gelatin
– 4 large eggs
– 2 cups sifted all-purpose flour
– 2 teaspoons baking powder
– 1 cup whole milk
– 1 tablespoon vanilla extract
– cup strawberry puree from fresh strawberries
Frosting:
– cup unsalted butter, softened
– 1 package 8 oz cream cheese, softened
– 4 cups powdered sugar, sifted
– cup strawberry puree
– 1 teaspoon vanilla extract
Steps:
1. Preheat your oven to 350F 175C. Grease and flour two 9-inch round cake pans.
2. In a large bowl, cream together the butter, sugar, and strawberry gelatin until light and fluffy.
3. Beat in the eggs one at a time, mixing well after each addition.
4. In a separate bowl, sift together the flour and baking powder.
5. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture.
6. Stir in the vanilla extract and strawberry puree until well combined.
7. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Frosting:
1. In a medium bowl, beat together the butter and cream cheese until smooth.
2. Gradually add the powdered sugar, beating until light and fluffy.
3. Mix in the strawberry puree and vanilla extract until well combined.
Assembly:
1. Once the cakes are completely cool, spread a layer of frosting over the top of one cake layer.
2. Place the second cake layer on top, then frost the top and sides of the cake with the remaining frosting.
