Cranberry Swirl Cheesecake
A delightful cranberry swirl cheesecake featuring a creamy vanilla bean filling with a graham cracker crust and a festive cranberry sauce swirl!
Ingredients
Cranberry Sauce:
2 cups cranberries
2/3 cup sugar
2/3 cup orange juice about 2-3 oranges
2 tbsp orange zest from about 2 oranges
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp vanilla bean paste
Graham Cracker Crust:
2 cups graham cracker crumbs
1 tbsp sugar
7 tbsp unsalted butter, melted 杻
Vanilla Bean Cheesecake Filling:
16 oz cream cheese, room temperature 燎
1/2 cup sugar
2 large eggs, room temperature 讀
1/2 cup sour cream, room temperature 拏
1/4 cup heavy cream, room temperature 拏
1 1/2 tsp vanilla bean paste
Whipped Cream:
1 1/2 cups heavy whipping cream, cold 拏
3 tbsp powdered sugar
Sugared Cranberries:
2 tbsp sugar
2 tbsp water
1/4 cup cranberries
Instructions
1 Make Cranberry Sauce:
In a saucepan, cook cranberries, sugar, orange juice, zest, cinnamon, and nutmeg over medium heat until cranberries burst, about 10 minutes.
Remove from heat, allow to cool slightly, then blend until smooth.
Strain, add vanilla bean paste, and chill for 3 hours.
2 Prepare the Crust:
Preheat oven to 350F 175C. Grease a 9 springform pan.
Process graham crackers and sugar until fine. Add melted butter and combine.
Press mixture into the pans bottom and sides. Set aside.
3 Prepare Cheesecake Filling:
Mix cream cheese and sugar until smooth. Add eggs one at a time, mixing after each.
Add sour cream, heavy cream, and vanilla bean paste, blending until smooth.
4 Assemble Cheesecake:
Pour half of the filling into the crust. Top with half the cranberry sauce in dollops.
Add remaining filling and swirl in the remaining cranberry sauce using a thin knife.
Wrap the pan with foil, place in a water bath, and bake for 1 hour. Cool in the oven for 1 hour.
5 Chill and Serve:
Cool the cheesecake on a rack, then refrigerate for at least 4 hours, preferably overnight.
6 Make Whipped Cream:
Whip cold heavy cream and powdered sugar until peaks form.
7 Prepare Sugared Cranberries:
Simmer sugar and water, then cool for 10 minutes. Coat cranberries, place on a rack, let dry, and roll in sugar.
8 Top Cheesecake:
Garnish cheesecake with whipped cream and sugared cranberries.
