Country Fried Squash
Ingredients:
2 medium yellow squash, sliced into rounds1/2 cup all-purpose flour1/4 cup cornmeal1 teaspoon garlic powder1 teaspoon onion powder1/2 teaspoon salt1/4 teaspoon black pepper2 eggs, beatenVegetable oil for frying
Instructions:
In a shallow dish, combine flour, cornmeal, garlic powder, onion powder, salt, and pepper.Dip each squash slice into the beaten eggs, then dredge in the flour mixture, coating both sides evenly.Heat vegetable oil in a skillet over medium heat.Fry the coated squash slices for 2-3 minutes on each side, or until golden brown and crispy.Remove from the skillet and drain on paper towels. Serve hot.
