8 oz fideo noodles or thin vermicelli, broken into smaller pieces2 tablespoons vegetable oil1/2 onion, chopped2 cloves garlic, minced1 can 14.5 oz diced tomatoes, undrained2 cups chicken broth1 teaspoon ground cumin1/2 teaspoon chili powder optionalSalt and pepper to tasteFresh cilantro, chopped optional, for garnish

Instructions:


Heat the oil in a large skillet over medium heat. Add the fideo noodles and cook, stirring occasionally, until they are lightly browned about 3-5 minutes.Add the chopped onion and garlic to the pan and cook until softened, about 2 minutes.Stir in the diced tomatoes, chicken broth, cumin, chili powder if using, salt, and pepper.Bring to a simmer, then reduce heat and cover. Cook for 10-12 minutes, until the noodles are tender and most of the liquid is absorbed.Garnish with fresh cilantro and serve hot.
