Churro Saltine Toffee
This sweet, crispy churro-inspired toffee combines cinnamon sugar with crunchy saltines and a smooth chocolate topping. Perfect for a quick and addictive treat!
Ingredients:
1 sleeve saltine crackers about 40 crackers
1 cup unsalted butter
1 cup granulated sugar
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
1 cup semisweet chocolate chips
Additional cinnamon sugar 1/4 cup sugar 1 teaspoon cinnamon for topping
Directions:
Prepare the Pan and Oven: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper, and arrange the saltine crackers in a single layer to cover the entire sheet.
Make the Toffee Base: In a medium saucepan over medium heat, melt the butter and sugar together, stirring frequently. Once it starts to bubble, let it cook for 3 minutes without stirring, until it thickens slightly. Remove from heat and stir in the vanilla and cinnamon.
Pour Over Crackers: Pour the toffee mixture evenly over the saltine crackers, spreading it with a spatula to cover all the crackers.
Bake: Place the baking sheet in the preheated oven and bake for 78 minutes, or until the toffee is bubbly.
Add Chocolate: Remove the pan from the oven and immediately sprinkle the chocolate chips over the hot toffee. Let them sit for a couple of minutes to soften, then spread the melted chocolate evenly over the toffee layer.
Add Cinnamon Sugar: Sprinkle a light layer of cinnamon sugar over the melted chocolate for extra churro flavor.
Cool and Break into Pieces: Allow the toffee to cool completely at room temperature, or refrigerate for faster setting. Once hardened, break into bite-sized pieces and enjoy!
