For the Pudding Layer:

2 packages 3.4 ounces each instant vanilla pudding mix

3 1/2 cups whole milk

1/2 cup sour cream

8 ounces whipped topping e.g., Cool Whip, thawed

For Assembly:

21 whole graham crackers cinnamon or regular

16 ounces caramel apple dip such as Marzetti brand

Directions:

Prepare the Cinnamon Apples:

In a large saucepan over medium-low heat, combine the diced apples, granulated sugar, and ground cinnamon.

Cook, stirring occasionally, until the apples are tender. If the mixture is too juicy, sprinkle 1-2 tablespoons of flour over the apples and stir until the mixture thickens.

Remove from heat and allow the apples to cool to room temperature.

Prepare the Pudding Layer:

In a large mixing bowl, whisk together the instant vanilla pudding mix and whole milk until smooth.


Stir in the sour cream until fully incorporated.

Gently fold in the thawed whipped topping until the mixture is smooth and creamy.

Assemble the Éclair Cake:

In a 9×13-inch baking dish, place a single layer of graham crackers to cover the bottom.

Spread half of the cooled cinnamon apple mixture evenly over the graham crackers.

Spoon half of the pudding mixture over the apples, spreading it evenly.

Add another layer of graham crackers on top of the pudding layer.

Repeat with the remaining apple mixture and pudding mixture.

Finish with a final layer of graham crackers on top.

Add the Caramel Topping:

Warm the caramel apple dip in the microwave for 30 seconds to soften it, making it easier to spread.

Stir the caramel and, if necessary, heat for an additional 20-30 seconds until it reaches a spreadable consistency.

Evenly spread the softened caramel over the top layer of graham crackers.

Chill and Serve:

Cover the dish and refrigerate for at least 8 hours or overnight to allow the layers to set and the flavors to meld.

Slice and serve chilled.
