Easy Caramel Fudge
Ingredients:
1/3 cup 75g unsalted butter
1 cup 200g packed brown sugar
1 can 14 oz or 395g sweetened condensed milk
2 tablespoons 30ml golden syrup or corn syrup
7 oz 200g white chocolate, finely chopped
1/2 teaspoon vanilla extract
1/2 teaspoon salt
Directions:
Prepare the Pan:
Line an 8×8 inch 20×20 cm pan with parchment paper, leaving an overhang around the edges for easy removal.
Melt the Base Ingredients:
In a heavy-bottomed saucepan over low heat, combine the unsalted butter, brown sugar, sweetened condensed milk, and golden syrup or corn syrup.
Stir continuously until the mixture is fully melted and smooth.
Cook the Mixture:
Once melted, continue to cook over low heat, bringing the mixture to a gentle boil.
Maintain this gentle boil for 5 minutes, stirring constantly to prevent burning.
Incorporate the Chocolate:
Remove the saucepan from the heat.
Immediately add the finely chopped white chocolate, vanilla extract, and salt.
Stir until the chocolate is completely melted and the mixture is smooth.
Set the Fudge:
Pour the mixture into the prepared pan, spreading it evenly.
Refrigerate for about 4 hours, or until the fudge is firm.
Slice and Serve:
Once set, lift the fudge out of the pan using the parchment overhang.
Place on a cutting board and slice into squares with a sharp knife.
Store in an airtight container.
