Blackened Salmon Stuffed with Spinach & Parmesan
Ingredients:
For the Salmon:
2 large salmon fillets
1 tbsp olive oil
1 tbsp butter, melted
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano
For the Filling:
1 cup fresh spinach, chopped
1/2 cup cream cheese, softened
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1/2 tsp lemon zest
Salt and pepper to taste
Directions:
Prepare the filling: In a bowl, mix chopped spinach, cream cheese, Parmesan, garlic, lemon zest, salt, and pepper until well combined.
Stuff the salmon: Slice a pocket into each salmon fillet and generously stuff with the spinach-Parmesan mixture.
Season the salmon: Mix paprika, cayenne, garlic powder, onion powder, salt, black pepper, and oregano. Brush salmon with melted butter and coat with the spice mix.
Cook the salmon: Heat olive oil in a pan over medium-high heat. Sear salmon for 4-5 minutes per side until blackened and cooked through.
Serve: Enjoy hot with a side of roasted vegetables or a fresh salad.
