Ingredients:

– 3 8 oz packages cream cheese, softened

– 1 cup granulated sugar

– 2 cups Nilla wafer crumbs

– 1/2 cup sour cream

– 1 cup mashed ripe bananas about 2 medium bananas

– 1/4 cup unsalted butter, melted

– 1 cups cold milk

– 3 large eggs

– 1 teaspoon vanilla extract

– 1 3.4 oz package instant banana pudding mix

– 2 cups whipped cream

– 1/2 cup crushed Nilla wafers


– Banana slices for garnish

Instructions:

1. Preheat your oven to 325F 163C. Prepare a 9-inch springform pan by greasing it.

2. In a mixing bowl, combine the Nilla wafer crumbs with melted butter until well blended. Firmly press this mixture into the bottom of the prepared pan to create your crust. Bake in the preheated oven for 10 minutes, then allow it to cool.

3. For the cheesecake filling, beat the softened cream cheese and granulated sugar together in a large mixing bowl until smooth.

4. Gradually add the eggs, one at a time, mixing well after each addition.

5. Stir in the mashed bananas, sour cream, and vanilla extract until fully incorporated.

6. Pour the filling into the cooled crust, spreading it evenly. Bake for 60-70 minutes, just until the center is set with a slight jiggle.

7. Once baked, turn off the oven and crack the door to let the cheesecake cool slowly inside for 1 hour.

8. While cooling, prepare the banana pudding layer by whisking the instant banana pudding mix with cold milk in a separate bowl until it thickens.

9. After the cheesecake has cooled, spread the banana pudding mixture over the top. Cover and refrigerate for at least 4 hours or overnight.
