Banana Pudding Cheesecake

Ingredients:
– 2 cups crushed vanilla wafers
– 3 8 oz packages cream cheese, softened
– 1 cup mashed ripe bananas
– 1/2 cup sour cream
– 1/2 cup heavy whipping cream
– 1 cup granulated sugar
– 3 large eggs
– 1 box 3.4 oz instant banana pudding mix
– 1 1/2 cups cold milk
– 1/4 cup melted butter
– 1 cup whipped topping
– 2 bananas, sliced
– Crushed vanilla wafers, for topping
Instructions:
1. Start by preheating your oven to 325F 165C. Prepare a 9-inch springform pan by greasing it to make sure your cheesecake doesnt stick.
2. In a medium bowl, combine the crushed vanilla wafers and melted butter. Mix until the crumbs are well-coated, then press this mixture firmly into the bottom of your prepared pan to create a crust.
3. In a large bowl, beat the softened cream cheese and granulated sugar together until the mixture is smooth and creamy.
4. Add the eggs, one at a time, to the cream cheese mixture, making sure to beat well after each addition.
5. Gently mix in the mashed ripe bananas and vanilla extract until everything is well combined.
6. Then, add in the sour cream and heavy whipping cream. Beat the mixture until its completely smooth and luscious.
7. Pour the cheesecake batter over the prepared crust in the springform pan, spreading it evenly.
8. Bake in the preheated oven for 50-60 minutes, or until the center is nearly set. You want the edges to be firm while the center has a slight jiggle.
9. Once baked, remove the cheesecake from the oven and cool it on a wire rack for about 10 minutes. Carefully run a knife around the edge of the pan to loosen the cheesecake, then let it cool for an additional hour at room temperature.
10. Afterward, refrigerate the cheesecake overnight to allow it to set properly.
11. When ready to serve, in a medium bowl, whisk together the instant banana pudding mix and cold milk until the mixture thickens. Spread this over the chilled cheesecake.
