Baked Chicken Schnitzel
Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil or spray for a lighter version
Lemon wedges, for serving optional
Instructions:
Preheat the oven to 400F 200C.
Set up a breading station: place flour in one shallow dish, beaten eggs in another, and panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper in a third dish.
Season the chicken breasts with a pinch of salt and pepper, then dip each piece in flour, coating evenly. Dip into egg, then coat thoroughly with the seasoned panko breadcrumbs.
Place the breaded chicken breasts on a parchment-lined baking sheet. Drizzle with olive oil or spray lightly with cooking spray.
Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through internal temperature should reach 165F or 74C.
Serve with lemon wedges for a burst of fresh flavor!
