Ingredients:

4 boneless, skinless chicken breasts

1/2 cup all-purpose flour

Salt and pepper, to taste

2 tbsp olive oil

1/4 cup capers, drained

1/2 cup fresh lemon juice about 2 lemons

3/4 cup chicken broth

2 tbsp unsalted butter


Fresh parsley, chopped, for garnish

Instructions:

Season the chicken breasts with salt and pepper. Lightly dredge them in flour, shaking off excess.

Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add chicken broth, lemon juice, and capers. Stir to combine, scraping up any browned bits from the pan. Bring to a simmer and cook for 2-3 minutes.
